The +/- indicate the favorite and the underdog, similar to with the point spread. In this case the Angels would be considered the favorite to win the game at -275 and the Dodgers would be the underdog at +220. The total, or over/under (o/u), is a type of bet that is based around the total number of points scored in the game by both teams combined. Below is an example of a total bet in a Los Angeles Angels game:
